Smoked Trout Salad with Currants, Apples, Celery and Almonds
4 filets of nice, smoked trout (2 packages)
1 granny smith apple, diced
1 handful of currants
1.4 cup of chopped toasted almonds
2 celery stalks, diced
2 scallions, diced
2 handfuls of fresh parsley, chopped fine
Juice of 2 lemons
a generous drizzle of extra virgin olive oil
a sprinkle of salt and pepper
Sprouts or micro greens to garnish
Flake the smoked trout and toss it with the apples, currants, almonds, celery, scallions, and parsley. Toss to combine and then toss in the lemon juice and the olive oil. It should be very lemony. Season the salad with the salt and pepper and serve with a handful of sprouts or microgreens on top.
